Also known as The Desert Spoon, sotol is a lesser known mezcal, made from a plant of the same name, only found in the Chihuahua region. The distillation process is similar to tequila, but a triple distillation in a double column copper still, instead of a pot still, gives a creamy finish to a smoky menthol with a hint of brine.
